This is my mother-in-laws recipe and a favorite in our household. With its high protein and fat content and low carbs its a great meal that fills you up. While it isn't exaclty photogenic it is delicious! To amp it up add more habanero for less, reduce to one!
1 tomato- top cut off
1 sweet onion- chopped and diced
1.5lb cubed stew meat
2 tablespoons of Peanut Butter
2 habanero peppers
1/4 cup of virgin olive oil
4 cups of water
1 tablespoon of cumin
1 tablespoon of garlic powder
1 cube of chicken bouillion (MUST use cube or past NOT chicken broth)
8 cups of cooked, brown rice
salt and pepper to taste
Bring water to a boil add in tomato, sweet onion, peppers and stew meat. Cook on high for 20 minutes. Then add the boullion, peanut butter, olive oil, cumin, garlic powder and salt and pepper. Stir well and cook until thick. Serve with 1 cup of rice.
